    Step 1: Start the Dough.  Add the yeast and 1 cup hot water to a mixer, and mix on low. Slowly add the honey, salt, and flour.

    Step 2: Mix and Rise. Let the mixer run at medium speed until the dough is sticky, and pulls away from the sides of the mixing bowl. Let the dough rest in a bowl for about 15-20 minutes.

    Note: At this point, you can preheat the oven to 425°F, prep the toppings and sprinkle the cornmeal over a large 14” skillet.

    Step 3: Shape the Crust. With oiled hands, pull and shape the dough into a circle.

    Step 4: Prebake the Crust. Lay the dough on top of the cornmeal coated pan. Flatten and stretch the dough to fill the pan using a rolling pin or your hands. Bake the dough for 10 minutes.

    • 14" cast iron skillet

    Ingredients

    Pan Pizza Dough

    • 1 tablespoon yeast rapid rise
    • 1 cup water warm from the tap
    • 1 teaspoon honey
    • 1 teaspoon salt
    • 1 tablespoon olive oil
    • 2½ cups flour
    • ½ cup cornmeal

    Instructions

    • Preheat oven to 425°F
    • Add yeast to a mixing bowl. Pour the 1 cup hot tap water over it and mix.
    • Add the remaining ingredients and let the mixer run at medium speed until the dough clears the side of the bowl. The dough shouldn't be sticky.
    • Let dough rest in a bowl 15-20 minutes while you preheat the oven and prepare the toppings.
    • On a large cast iron pizza pan or 14" skillet, sprinkle cornmeal generously (this prevents sticking when fully cooked).
    • With oiled hands, remove the dough from the bowl and pull/shape into a circle, then lay it on top of your cornmeal coated pan.
    • Using a rolling pin or your hands, flatten and stretch the dough to fill the pan.
    • Bake the dough for 10 minutes.
    • Remove prebaked crust from the oven and spread with your toppings: sauce, shredded cheese, favorite toppings.
    • Place topped pizza back into oven and bake for 10-15 minutes more, or until cheese is melted and toppings are browned.
    • Slide the whole pizza from the pan to a cutting board and slice into pieces.

    • Place your skillet in the oven while it preheats for a perfectly crispy crust as soon as the dough hits the pan.

      I was surprised how much the cornmeal helped keep these from sticking down. I felt that the taste was very distinct cooking it on cast iron.
