    Ingredients

Text labeled image of all the ingredients needed to make the recipe.

At a first look, the list of ingredients can seem like this just might be too daunting of a recipe to make on your average Wednesday night, but we promise you, this really is super easy pork chops and apples recipe.

Pork Chops — thick cut, bone in pork chops are the way to go for this recipe.

Produce — freshly sliced apples, thinly sliced onions, and fresh herbs are what help give this recipe its phenomenal taste.

Seasonings — of course salt and pepper are a must but granulated garlic and sweet paprika are needed too.

Pantry — Olive oil and butter for searing and sautéing, you'll also need dijon mustard, apple cider vinegar, brown sugar, and chicken broth to make the sauce you'll want to sip.

See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.

    Variations

    • We used gala apples and granny smith apples but pink lady, honey crisp, and cosmic apple varieties are wonderful.
    • Boneless pork chops or even a pork loin can be used in place of the bone in pork chops.
    • Use dried herbs instead of fresh thyme and sage.
    • Turn the sauce into a gravy, by using the full can of broth, add ½ tablespoon more of the Dijon mustard, brown sugar, and apple cider vinegar. Add ¼ teaspoon more of the seasonings, to taste. Then thicken with a roux or a cornstarch slurry to make a traditional gravy.

How to Make Pork Chops and Apples

Two seasoned pork chops being seared in a cast iron skillet.

Step 1: See the expert tips below for hints on easier prep. Preheat the oven to 350°F. Over medium high heat, add the butter and oil to the skillet and allow to get hot; then sear the pork chops on each side for 3-4 minutes.

The sauce has been made in a bowl.

Step 2: While the chops sear, make the sauce. Once chops have seared, remove from heat, set on a plate and set aside.

Apples, onions, and herbs in a cast iron skillet.

Step 3: While off the heat, scrape off any stuck on bits. (add more butter or oil if needed). Return pan to heat and toss in the onions, apples, and fresh herbs. Stir constantly while coating the apples and onions in the butter/oil. About 2 minutes.

The sauce being poured into the pan.

Step 4: Return the pork chops to the skillet atop the apples and onions; pour the sauce over the pork chops. Place in the oven and cook for 10-20 minutes or until a thermometer reaches 145°F in the center, but without touching the bone.

Fresh from the oven pork chops and apples.

Step 5: Allow the pork chops to rest 3-5 minutes before slicing/serving. Plate the pork chops and arrange the apples and onions on top and drizzle the pan sauce over everything. Discard the cooked herbs. Garnish with fresh herbs if desired. Serve and enjoy.

Expert Tips for making this easy pork chops and apples recipe

    Seasoned pork chops.

Set out pork chops at least 30 minutes before cooking to come to room temperature; season with the salt, pepper, granulated garlic, and paprika on both sides. Use 1 ½ inch thick chops.

Red onions thinly sliced using a mandolin slicer.

A mandolin slicer will provide you with thin and uniform onion slices.

A granny smith apple being sliced with an apple slicer.

For uniform apple slices, we used a press-down apple slicer and corer.

Apple slices being cut in half again to make them thinner.

Slice each apple segment in half again with a paring knife. This is significantly quicker and more uniform than slicing free-hand.

Seared pork chop in a bed of mashed potatoes with apples and onions.

    Serving Suggestions

For an even bolder taste of fall, plate with mashed potatoes or sausage stuffing. Honey glazed carrots and steamed asparagus would brighten the dish up. And to round out the meal, biscuits are a must, either our buttermilk biscuits or even zesty lemon biscuits would be amazing.

    Recipe FAQs

How long will 2-inch thick pork chops take to cook?

2-inch thick pork chops will take over 40 minutes to register 145°F internally. Recommend no more than 1 ½ inch thick for the approximate 20 minute cooking time.

How long will boneless pork chops take to cook?

Once in the oven, check for an internal temperature of 145°F at the 10 minute mark.

Can I cook this entire dish on the stove instead of finishing it in my oven?

Once the sauce has been added, cover, and allow to cook for 20-30 minutes, but check doneness after 15 to gauge how much more time is needed. The thickness of the pork chop will determine the actual cooking time, so it will vary.

What can I use instead of chicken broth?

White wine, apple juice or cider, beer, or water would all be great options.

    Notes

    Notes:
Don't overcook the apples and onions. You want the apples to soft but not soggy. The onions should be tender.
Drizzle the au jus over each individual plate instead to the platter to ensure everyone gets some.
To give this recipe an even more taste of fall, add a pinch of cinnamon or apple pie spice to the sauce.
