Set out pork chops at least 30 minutes before cooking to come to room temperature; season with the salt, pepper, granulated garlic, and paprika on both sides. Set aside.
Preheat the oven to 350°F. Prep the apples, onions, and sauce.
Over medium high heat, add the butter and oil to the skillet and allow to get hot.
Once hot, sear the pork chops on each side for 3-4 minutes.
Remove from heat and reduce the heat to medium. Remove the pork chops from pan to a plate and set aside.
While off the heat, scrape off any stuck on bits. (add more butter or oil if needed)
Return pan to heat.
Toss in the onions, apples, and fresh herbs. Stir constantly while coating the apples and onions in the butter/oil. About 2 minutes.
Return the pork chops to the skillet atop the apples and onions.
Pour the sauce over the pork chops.
Place in the oven and cook for 10-20 minutes or until a thermometer reaches 145°F in the center, but without touching the bone.
Plate the pork chops and arrange the apples and onions on top and drizzle the pan sauce over everything. Discard the cooked herbs. Garnish with fresh herbs if desired. Serve and enjoy.

Notes:Don't overcook the apples and onions. You want the apples to soft but not soggy. The onions should be tender.Drizzle the au jus over each individual plate instead to the platter to ensure everyone gets some. To give this recipe an even more taste of fall, add a pinch of cinnamon or apple pie spice to the sauce.
