This ham is cooked surrounded by fresh carrots, turnips, parsnips, shallots, and garlic sitting in a pool of broth. The glaze is poured over the ham and meets the vegetables and broth turning the cooking liquid into something you'll want to drink.
What is stone ground mustard?
If you've ever spent any time on the condiment aisle looking at the mustard options, you might be wondering what they all mean and taste like. With terms like stone ground, course ground, spicy brown, Dijon, and yellow, they aren't the most descriptive to flavor, except maybe for truffle mustard.
Stone ground mustard is a slightly spicy brown mustard that has been mixed by a stone mill to leave it course with a lot of texture.
Why this recipe works
How many times have you sat down to a ham dinner and it's just way too sweet? Or worse, way too salty? That's the risk with ham. Sweetened glazed hams are wonderful but sometimes they can be over the top.
Our recipe is the perfect balance of not being too sweet nor too salty.
Recipe Ingredients
- Ham — we used a store-ready already cooked spiral cut ham, but any ham or ham shank will work.
- Vegetables — carrots, turnips, and parsnips. Clean and chop smaller for more even cooking time.
- Broth — low-sodium chicken broth is the best option to keep the sodium content and taste lowered.
- Stone ground mustard — this is the base of the glaze providing a savory flavor to the sweetness.
- Honey — the secondary part of the glaze that provides the sweetness to the glaze and the sauce.
- Apple cider vinegar — it may sound like an odd ingredient but this humble vinegar provides the flavor depth in the overall dish without bitterness or tartness.
- Herbs and seasonings — Shallots, garlic, thyme, salt, and pepper are the freshness and brightness to the overall dish. Olive oil is used to help browning and increased flavor.
How to make honey mustard glazed ham
Step 1 — Place the ham in the skillet and score the top of the ham the opposite way of the spiral cut, but not too deeply. Pour the broth over the ham, working it in-between the slices.
Step 2 — In a small bowl, mix the glaze ingredients together, once combined, press in the fresh thyme and allow to soak. Set aside until ready to use allowing the herb to further infuse the glaze.
Step 3 — Place the carrots, parsnips, and turnips in the broth around the ham. Then add the chopped shallots and garlic on top of the vegetables and some on top of the ham.
Step 4 — Give a final whisk to the glaze and pour it slowly over the ham, in-between some of the slices. Drizzle a bit over the vegetables as well.
Step 5 — Place the thyme over all, both the ham and the vegetables. Drizzle with the olive oil.
Step 6 — Cover the skillet with foil and place in a preheated 350°F oven. Bake for 2 hours. Baste occasionally with the liquid, recover and bake until the ham reaches an internal temperature of 160°F and the vegetables are fork-tender.
Recipe FAQs and Variations
Any you want. Course ground, Dijon, or spicy brown are the closest in flavor but yellow mustard will work too for a subtler flavor.
Yes. You can use potatoes, kale, green beans, Brussels sprouts or other favorite hearty vegetables in place of these. Or in addition to these.
Brown sugar will be a wonderful substitution to honey.
A 7-quart enameled oval roaster or a Granite ware style oval roaster with lid will work perfectly. Additionally a large casserole pan will work too.
The remaining liquid, once strained, can be used to make soups like a ham and bean soup.
Absolutely! Place the ham, broth, and vegetables in the slow cooker. Then add the glaze. Cook on high for 3 hours or low for 5-6 hours.

Skillet Honey Mustard Glazed Ham

- 15" cast iron skillet or
- 7 quart enameled oval Dutch oven
Ingredients
- 15 oz. low sodium chicken broth
- 10 lb. bone-in smoked ham spiral cut
- ¾ cup honey
- 3 tbsp. apple cider vinegar
- 2 tbsp. stone ground mustard
- 1 tsp. salt
- 1 tsp. pepper
- 1 tbsp. thyme fresh
- 6 oz. baby carrots
- 4 turnips small; cubed
- 2 parsnips sliced
- 3 shallots roughly chopped
- 1 bulb garlic roughly chopped
- 1 tbsp. olive oil extra virgin
Instructions
- Preheat oven to 350°F.
- In a 15-inch cast-iron skillet, place the scored ham. Pour broth over the ham.
- In a medium bowl, whisk together honey, vinegar, mustard, salt, and pepper. Press in the thyme; set aside.
- Place the prepared vegetables around the ham in the skillet. Add the shallots and garlic on top of both the ham and the vegetables.
- Pour the glaze over the ham and in-between the slices. Drizzle a small amount over the vegetables.
- Tightly cover with foil and bake for 2 hours; occasionally basting with the liquid at the bottom.
- Bake until a meat thermometer registers 160°F. Remove from the skillet and place on a platter or cutting board covered. Allow to rest for 5 minutes.
- Plate with the vegetables and add a bit of the cooking liquid over the platter. Serve and enjoy.
