This homemade breakfast burrito starts with seasoned sausage, crispy tater tots, and soft scrambled eggs, all wrapped in a warm tortilla and topped with cheese, salsa, and more. It’s easy to prep in one skillet and perfect for customizing to your family’s tastes.
Cook sausage and add taco seasoning. Remove from skillet and put in bowl.
Sauce pepper and onion in the sausage fat. Remove from skillet and put in bowl.
Beat eggs and scramble. Remove from skillet and put in bowl.
Cook tater tots using package instructions in a skillet, oven, or air fryer. Then place in a bowl.
Combine all ingredients into the skillet or leave separate depending on who you are fixing for. Some children might not like some of the ingredients.
Add ingredients to tortilla and top with sour cream, olives, salsa and green chilies.
Notes
Use a large skillet; a 10-inch nonstick skillet gives you enough space to cook everything efficiently without overcrowding.
Keeping the sausage, eggs, veggies, and tater tots separate makes it easy for picky eaters to customize their burrito.
Microwave the tortillas wrapped in a damp paper towel or toast briefly in a dry skillet so they’re soft and easy to roll.
Store assembled burritos without toppings tightly wrapped in the fridge for up to 3 days—great for grab-and-go mornings. Or keep fillings separate and assemble fresh as needed.
