Instructions
Combine the honey, red pepper flakes, and thyme sprigs in a small saucepan over medium heat.
Heat until small bubbles begin to form along the edges of the pot. Give the mixture a gentle stir, then immediately remove from heat.
Allow the honey mixture to sit for 15 minutes to let the thyme and red pepper flavors infuse.
Remove the thyme sprigs and stir in the red wine vinegar and salt until fully combined.
Let the honey cool to room temperature, then transfer to clean glass jars with airtight lids.

Notes
Watch the honey closely while heating. It can foam up and boil over quickly. Remove from heat at the first sign of bubbles.
Tie the thyme sprigs together with kitchen twine (bouquet garni) for clean, easy removal.
Leave the red pepper flakes in the jar for a classic look, or strain through a fine mesh sieve for clear honey.
Store in a sealed glass jar at room temperature for up to 3 months. Do not refrigerate.
