Equipment

  • 15" cast iron skillet or
  • 7 quart enameled oval Dutch oven

Ingredients

  • 15 oz. low sodium chicken broth
  • 10 lb. bone-in smoked ham spiral cut
  • ¾ cup honey
  • 3 tbsp. apple cider vinegar
  • 2 tbsp. stone ground mustard
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tbsp. thyme fresh
  • 6 oz. baby carrots
  • 4 turnips small; cubed
  • 2 parsnips sliced
  • 3 shallots roughly chopped
  • 1 bulb garlic roughly chopped
  • 1 tbsp. olive oil extra virgin

Instructions

  • Preheat oven to 350°F.
  • In a 15-inch cast-iron skillet, place the scored ham. Pour broth over the ham.
  • In a medium bowl, whisk together honey, vinegar, mustard, salt, and pepper. Press in the thyme; set aside.
  • Place the prepared vegetables around the ham in the skillet. Add the shallots and garlic on top of both the ham and the vegetables.
  • Pour the glaze over the ham and in-between the slices. Drizzle a small amount over the vegetables.
  • Tightly cover with foil and bake for 2 hours; occasionally basting with the liquid at the bottom.
  • Bake until a meat thermometer registers 160°F. Remove from the skillet and place on a platter or cutting board covered. Allow to rest for 5 minutes.
  • Plate with the vegetables and add a bit of the cooking liquid over the platter. Serve and enjoy.
