Peach Clafoutis

Peach Clafoutis is a classic French dessert that is simple to make and truly delicious. The dish starts with fresh peaches, which are arranged in a baking dish and covered with a custard-like batter made from eggs, sugar, milk, heavy cream and flour.

Equipment

  • 10" cast iron skillet

Ingredients

  • 4 eggs separated
  • cup sugar
  • 6 tbsp flour all purpose
  • 2 tsp vanilla extract
  • 1 cup heavy whipping cream
  • ½ tsp salt
  • 12 oz peaches sliced
  • ½ tsp apple pie spice or cinnamon

Instructions

  • Preheat oven to 375°F.
  • In a mixing bowl, combine egg yolks and 1/3 cup sugar. Beat on medium/high for about 8 minutes.
  • Add flour, vanilla extract and heavy whipping cream and mix until well combined.
  • Add lightly beaten egg whites and mix until combined.
  • Coat cast iron skillet with buttered cooking spray.
  • Add a #8 (10") cast iron skillet to oven and preheat for 5 minutes.
  • Add peaches and cinnamon to bottom of skillet.
  • Add batter to the top of peach mixture.
  • Bake for 30-35 minutes or until a toothpick comes out clean.
  • Top with powdered sugar and cinnamon.
