    Creating the perfect sweet potato hash isn't hard at all. All it takes is some simple ingredients like sweet potatoes and vegetables along with spices for seasoning and eggs for added protein.

    Ingredients

    The ingredients for Sweet Potato Hash.
    • Bacon: Use uncured cut into 1" pieces. The fat that renders from the bacon will be used to saute the onions infusing them with so much savory and smoky flavors. 
    • Onion: A must-have ingredient; they bring out all of those wonderful flavors from the sweetness of the sweet potatoes. Feel free to use sweet, yellow, or white onion.
    • Sweet potato: This recipe uses cooked sweet potatoes to make the prep quick. You can bake or boil your sweet potatoes ahead of time or use leftover sweet potatoes to make this breakfast hash.. 
    • Eggs: These add protein and help hold the entire dish together. Crack them into a bowl one at a time before adding them to your pan. This makes them much easier to add to the pan.
    • Brown Sugar: Add a bit of brown sugar to slightly sweeten up the dish.
    • Seasoning: Just a touch of salt, pepper, paprika, and granulated garlic is all you need. 
    • Chives: Optional for garnish.

    Variations

    • Use White Potatoes or a Mixture. You can easily use cooked white potatoes or even a mixture of sweet and white potatoes if you prefer. 
    • Add More Seasonings. Try experimenting with different herbs or spices such as cumin!
    • Swap the Meats. This dish works equally well with chorizo, breakfast sausage, or Italian sausage instead. You can even use ground beef and serve this sweet potato hash for an easy lunch or dinner. 
    • Vegetarian. Skip the bacon and cook the onions in a bit of olive oil or other vegetable oil.
    • Add More Vegetables. Cooked sliced mushrooms or bell peppers with the onions or you can stir in some spinach or kale to wilt just before you add the eggs.

    How to Make Sweet Potato Hash

    Here’s everything you need to know to make this sweet potato hash recipe. Gather all your ingredients, your Dutch oven, and let’s get started. This dish goes together in a flash.

    Step 1: Cook the bacon. Add your chopped bacon to your skillet and cook until crispy.

    Step 2: Add the onion. Add the onion to the skillet and cook until they’re softened. 

    Step 3: Add the sweet potatoes. Add the cooked sweet potatoes and cook for about five minutes to warm up the potatoes. 

    Step 4: Add the spices. Add brown sugar, granulated garlic, salt, pepper, and paprika

    Step 5: Add the eggs. Make little spaces in the skillet and crack an egg into each one.

    Step 6: Cook. Cover and continue to cook until desired doneness. About 5-7 minutes for eggs that are still runny. Enjoy with some easy homemade popovers.

    Serving Suggestions

    These breakfast sweet potatoes make a terrific brunch or breakfast dish. It’s really meant to be hearty enough to stand on its own. For a weekday breakfast enjoy it with a smoothie or some fresh fruit. 

    For a weekend brunch or breakfast I love to give people options and serve it up with my zucchini potato waffle or some homemade popovers. For something sweet, I always reach for these jam filled ebelskivers or these sweet cherry rolls. 

    Serve this up for lunch or dinner too! It’s great paired with a simple salad or vegetable side dish like this roasted asparagus or some creamy coleslaw. 

    Skip the eggs and serve this as a sweet potato side dish for your favorite meaty mains!

    Expert Tips

    Cover the pan to cook the eggs. They will cook much more efficiently by surrounding them with heat from all sides. 

    Storing leftovers: Personally, I like the eggs cooked fresh. If I know I’m going to have leftovers, I cook just the amount of eggs for that meal and store the leftover sweet potatoes in the fridge. They will last for up to three days. Then I reheat them in a skillet and add the eggs. So yum!

    Add toppings: Feel free to jazz up your breakfast hash with some sliced avocado, cheese, salsa, or some chopped fresh herbs.

    • 10" cast iron skillet

    Ingredients

    • 8 strips bacon cut into 1" pieces
    • 1 cup onion diced
    • 1 cup sweet potato chopped, cooked
    • 4 eggs
    • 2 tablespoon brown sugar dark
    • ½ teaspoon salt
    • ½ teaspoon pepper
    • ½ teaspoon paprika
    • ½ teaspoon granulated garlic
    • chives chopped; optional

    Instructions

    • In a 10 inch skillet over medium heat, cook the bacon until crispy.
    • Add the onion and cook until softened- about 5 minutes. Reserve 2 tablespoon bacon fat
    • Add the cooked sweet potatoes and cook for about five minutes to warm up the potatoes. 
    • Add brown sugar, granulated garlic, salt, pepper, and paprika and stir to mix thoroughly
    • Make little spaces in the skillet and crack an egg into each one. Optionally add chives.
    • Cover and continue to cook until desired doneness. About 5-7 minutes for eggs that are still runny.

      Great recipe! Getting that crispy crust on the sweet potatoes in the cast iron skillet is the key. I topped mine with two over-easy eggs, and the runny yolks created the best natural sauce for the hash.
