Peach Clafoutis may sound intimidating with its fancy name, but it’s actually a breeze to make in just 35 minutes and is an incredibly satisfying, crowd-pleasing French dessert. A clafoutis is like a cross between a cobbler, tart, and pancake—tender, custard-like, and just the right amount of sweetness. It starts with fresh, ripe peaches and transforms into a beautifully baked, eye-catching dessert.

All you need are sweet, juicy peaches arranged in a skillet, and eggs, sugar, heavy cream, and flour to whip up the custard-like batter. The result is a wonderfully creamy and satisfying treat perfect for summer!

    Have You Ever Tried Clafoutis?

Clafoutis is a classic yet rustic French dessert, featuring fruit baked in a custard-like batter with a flan-like texture. While traditionally made with black cherries, this hidden gem has many variations depending on the fruit in season.

What makes it truly beautiful is the simplicity of the flavors and textures, paired with an easy preparation method. As one of Julia Child’s signature French recipes that she made more accessible to Americans, clafoutis doesn’t require rolling out pastry or making a crust. Just a handful of household ingredients, classic French style, and a burst of fruity goodness!

    Why You’ll Love This Recipe

    • Simple Yet Elegant: The best part about this dessert is that it doesn’t require advanced baking skills. With just a handful of ingredients, you can whip one up that looks like a high-end patisserie, whether it’s for a casual or fancy gathering.
    • Versatile and Rustic: Home cooks love this peach clafoutis recipe for its rustic charm when baked in a cast iron skillet and its ability to showcase any seasonal fruit. The easy batter serves as a canvas for seasonal ingredients, making it easy to experiment with your own flavor combinations.
    • Light and Creamy: The balance of sweet fruit, crispy edges, and a creamy custard-like batter creates a comforting blend of textures in every bite.

    Ingredients for this Recipe

Ingredients to make a peach clafoutis on the table ready to start baking.
    • Peaches: The true star of this dessert! Fresh peaches are the best choice for texture and flavor, but frozen or canned peaches work too—just be sure to drain any excess liquid.
    • Eggs: The egg yolks are whipped with sugar to create a custard-like base, while lightly whipped egg whites are mixed in separately to add a little more volume and structure to the batter.
    • Sweeteners: Granulated sugar adds sweetness, while vanilla enhances the flavor, contributing depth and a cozy aroma.
    • Flour: The binding ingredient that holds everything together and provides structure to the fresh peach dessert.
    • Whipping Cream: Adds richness and moisture, giving the clafoutis its signature creamy texture.
    • Salt and Spice: A pinch of salt balances the sweetness, while apple pie spice, with its cinnamon and cardamom notes, adds a touch of warmth and complexity to the flavor.

See the recipe card below for exact ingredient amounts, nutritional information, and detailed instructions.

    Variations

    • Add More Fruit: The simplest variation is to mix in more fruits! Try a berry medley of blueberries, raspberries, and blackberries to add a tart contrast and extra texture to this summer fruit recipe.
    • Spice Infusion: Sprinkle in a teaspoon of ground cinnamon and nutmeg into the batter for a warmer vibe—especially perfect for the cooler months. These spices complement the fruit beautifully!
    • Almond Flavor: Add a touch of almond extract and sprinkle sliced almonds on top for a nutty flavor and added crunch.
    • Caramelized Peach: For an extra punch of sweetness, sauté the peach slices in butter and brown sugar before adding them to the pan. This will give it a rich, molasses-like flavor.

    How to Make Peach Clafoutis

Ready to tackle this simple yet elegant, French peach dessert in just 4 easy steps? Preheat your oven to 375°F and heat your 10” skillet for 5 minutes. While they heat up, grab your ingredients and follow along:

Eggs in a mixing bowl with sugar.
    1. Step 1: Make the Custard Base.  Combine the egg yolks and sugar in a mixing bowl and beat on medium/high speed for 8 minutes, or until creamy and pale in color.
Flour and other ingredients added to the egg mixture.
    1. Step 2: Make the Batter. Mix in the flour, vanilla, and heavy whipping cream until well combined.
Egg whites added to the bowl of batter.
    1. Step 3: Add the Egg Whites. Gently add in the lightly beaten egg whites until fully incorporated.
Peaches arranged in a cast iron skillet.
    1. Step 4: Assemble the Peaches. Coat the bottom of the skillet with cooking spray and add a layer of peaches and a sprinkle of apple pie spice.
Batter poured over the top of the peaches.
    1. Step 5: Layer the Clafoutis. Pour the batter on top of the peach mixture.
Baked French clafoutis on the table.
    1. Step 6: Bake, Dust and Serve. Bake the dish at 375°F for 30-35 minutes or until a toothpick comes out clean.  Dust the peach clafoutis with powdered sugar, sprinkle with more apple pie spice, slice and enjoy!

    Hint: Layering the Peach Clafoutis

For an even bake, arrange the peach slices evenly in the skillet before adding the batter. This ensures each bite has the perfect balance of fruit and custard.

    Storage Directions

    • Make Ahead: This dessert tastes best fresh, but you can prepare the batter up to 24 hours in advance and store it in the fridge. If you bake it the day before, warm it in the oven before serving to refresh the texture and flavors.
    • Storing: Leftover peach clafoutis can be stored in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days. While it’s best enjoyed fresh for optimal texture, you can freeze it by transferring cooled slices to aluminum foil, then placing them in freezer-safe bags. It will keep for up to 1 month.
    • Reheating: This dessert can be enjoyed cold, at room temperature, or warmed. To reheat, place individual slices in the oven (in an oven-safe dish) or microwave. If frozen, thaw in the fridge overnight before reheating.

    Serving Suggestions

Ready to show off your easy peach clafoutis recipe? Here are a few decadent ways to serve it up and create an inviting meal for any occasion:

    • Dust the top with powdered sugar, just before serving, for an elegant touch. Or classically pair with a scoop of vanilla ice cream or whipped cream.
    • Garnish with fresh raspberries, a drizzle of caramel sauce or berry coulis, and a sprig of mint for a pop of color.
    • Enjoy a slice of this French peach dessert with delicious one-pot meal recipes like a zesty shrimp and sausage skillet or this savory whiskey pot roast, for a complete and easy meal.
    • Pair it with pasta like Dutch oven lasagna or a manicotti pasta bake to create a comforting meal for the whole family.

    Expert Tips

    • Use Ripe Peaches: For the best texture and sweetness, make sure your peaches are ripe. They should be juicy and slightly soft to the touch, which will help them hold up during baking without falling apart.
    • Room Temp Ingredients: Ensure your ingredients are at room temperature before mixing, especially the eggs and heavy cream. Let them sit out for about 30 minutes before you start. This will help prevent a lumpy batter and create a more even texture when baked.
    • Don’t Overbake: Keep an eye on your clafoutis dessert in the final stages of baking to avoid overbaking. The custard should be set but still slightly jiggly in the center. It will firm up as it cools after coming out of the oven.
    • Let it Cool: While it’s tempting to dive right in, allow the clafoutis to cool for 10-15 minutes before slicing. This helps it set properly and results in cleaner slices.

    Recipe FAQs

Why is the texture of my clafoutis rubbery?

It's overcooked or cooked at a higher heat if it has rubbery texture. You can avoid this problem by making sure your oven is calibrated correctly and checking the cooking progress a little ahead of the recipe cooking time. This way if your oven is cooking faster you can go ahead and remove it as soon as the custard is set.

How do I know when my peach clafoutis is done?

The custard portion of the dessert should be set but might still be a tiny bit jiggly in the center. It will set up a bit more as it cools. If it seems fairly wet in the center, you will need to cook it a bit longer.
